Hello this is my first post on this fourm . My name is Rob i live in alberta Canada. I am making beef jerky on a pitboss copperhead 7 series. It is a pellet hog . And u can only use smaller length and diameter pellts. Large ones will dam up in auger entrance. I am wondering why my beet jerky is pink on out side i think it is cooked throughout. Will meat cure cause this apperance of pink and uncooked.help please

Some curing mixtures containing sodium nitrite/nitrate can make the jerky pink.
I bring my jerky to 160°F before drying at 130°F, as recommended by USDA.
