image.jpg  hey y’all I’m new here and this is my first post, well I’m 
 actually new to bbq really I just got a pit boss and I’m on my second attempt of making beef jerky I feel the first batch came out burnt? And I followed everything Paul did on his video that’s show cased on the pit boss site for making beef jerky. And the second batch is looking better but it seems it’s finishing in 2 1/2 hours than than the 4-5 hours from the video and instructions on the site. Is it normal for jerky to be done that early compared to the directions?

Also just want to note on the smoke setting after a few hours the temp is getting to around 210-225 so maybe that is a reason why it’s cookong faster? I think it is supposed to cook at 160? If so how can I adjust to stay at that temp?
