I will be smoking 4 racks of spare ribs tomorrow. But, I can only fit 2 in the smoker at once. So, upon finishing the first 2 racks, if I re-wrap them in foil, then a towel, then store in a dry ice chest, would that retain enough heat long enough to prevent the meat making anyone sick. We're talking about about storing these 2 racks for a 4.5 to 5 hour period before they are eaten. Was thinking about putting them in the oven with foil for the last 2 hours at my lowest temp (170F) but worried about drying them out. Any of this (with oven, without oven) a big gamble?
